With my recent turn towards fitness I’ve been trying to develop healthier recipes to enjoy instead of simply eating only eating meat and two veg so I trolled the internet, and also came up with and added to a recipe I found for cod parcels.
I’ve always known that fish was incredibly good for you in working to keep your brain and heart healthy amongst other things, but this recipe also has the benefit of being gluten, wheat, dairy and egg free!
A handful of green beans or tender broccoli
2 bunches of cherry tomatoes
A squeeze of lemon juice
100ml of fish stock or white wine (if you’re that way inclined)
Basil, pine nuts and salt and pepper
Preheat your oven to 190oC
Place a square of aluminium foul on a countertop and place the greens in a pile in the centre. Place the cod fillet on top of the pile, followed by the tomatoes.
Drizzle the pile with olive oil and a squeeze of lemon juice before adding the seasoning and pine nuts. Form a tight seal with the aluminium foil, bringing it to a funnel above the pile and pouring in the liquid and seal.
Bake for 15-17 minutes.
This dish is so easy and delicious to make as all the flavours steam together infusing the cod and making the whole cod fillets so tender and moist. It’s also beneficially healthy.
